Vegetable Tian

You'll love this healthy dish. Vegetable Tian is a classic dish from Southern France, often served alongside grilled meat or fish. But it also makes a tasty lunch for vegetarians or no meat Monday!

Ingredients:

  • 3 tomatoes
  • 2 potatoes
  • 1 zucchini
  • 1 small aubergine
  • 2 onions
  • 2 cloves garlic
  • 100g of goat cheese
  • 4 tablespoons of olive oil
  • 5 sprigs of parsley
  • Salt and freshly ground pepper

Instructions:

  • Peel the onions and garlic. Wash and cut all the vegetables into 2 mm thick slices.
  • Pour a little oil in the bottom of the slow cooker and divide the vegetables (except the garlic) into the casserole, seasoning with salt and pepper.
  • Spread the rest of the oil over the vegetables.
  • Cut the goat cheese into shavings and place it on the vegetables.
  • Chop the garlic and parsley and sprinkle over the vegetables.
  • Close the slow cooker and start cooking.
