Summer Berry Cobbler

Ingredients:

  • Cobbler Base:
  • 1 cup flour
  • 3 tbsp sugar
  • 1 tsp baking powder
  • ¼ tsp cinnamon
  • 1 egg
  • ¼ cup milk
  • 2 tbsp oil
  • Fruit Filling:
  • 2 cups raspberries (fresh or frozen)
  • 2 cups blueberries (fresh or frozen)
  • 1 cup sugar
  • ¼ cup flour
  • ½ tbsp lemon juice
  • ⅛ tsp salt

Instructions:

  • In a large bowl, combine all the dry ingredients and mix well
  • Add the wet ingredients and whisk only until the mixture becomes combined
  • Pour the batter into the bottom of a greased springform pan (whatever size fits in your multi-cooker). Level into an even layer.
  • In a separate bowl, combine all of the filling ingredients. Mix to ensure the berries are coated.
  • Pour the entire mixture on top of the batter in the prepared pan and place the pan into your Crockpot™ slow cooker
  • Use the pressure cooker function and check the progress periodically. Cook for 40-45 mins or until when a toothpick is inserted in the cobbler & comes out clean.
  • Serve warm with a scoop of ice cream if preferred & et voilà. Enjoy!
