Summer Berry Cobbler

Ingredients:
- Cobbler Base:
- 1 cup flour
- 3 tbsp sugar
- 1 tsp baking powder
- ¼ tsp cinnamon
- 1 egg
- ¼ cup milk
- 2 tbsp oil
- Fruit Filling:
- 2 cups raspberries (fresh or frozen)
- 2 cups blueberries (fresh or frozen)
- 1 cup sugar
- ¼ cup flour
- ½ tbsp lemon juice
- ⅛ tsp salt
Instructions:
- In a large bowl, combine all the dry ingredients and mix well
- Add the wet ingredients and whisk only until the mixture becomes combined
- Pour the batter into the bottom of a greased springform pan (whatever size fits in your multi-cooker). Level into an even layer.
- In a separate bowl, combine all of the filling ingredients. Mix to ensure the berries are coated.
- Pour the entire mixture on top of the batter in the prepared pan and place the pan into your Crockpot™ slow cooker
- Use the pressure cooker function and check the progress periodically. Cook for 40-45 mins or until when a toothpick is inserted in the cobbler & comes out clean.
- Serve warm with a scoop of ice cream if preferred & et voilà. Enjoy!
