Lemon Thyme Rotisserie Chicken

Ingredients:
- 1 whole chicken
- 2 medium onions, peeled and sliced half-inch thick
- 1 tablespoon smoked paprika
- 1 tablespoon dark brown sugar
- 2 teaspoons sea salt
- 1 teaspoon garlic powder
- 1 teaspoon ground black pepper
- 1 teaspoon grated lemon peel
- ½ teaspoon dried thyme
- 1 tablespoon olive oil
- Fresh thyme sprigs and lemon slices (optional)
Instructions:
- Coat inside of your Crock-Pot® Slow Cooker with Sous Vide with nonstick cooking spray.
- Place onions in the bottom of the slow cooker.
- Combine paprika, brown sugar, salt, garlic powder, pepper, lemon peel and thyme in a small bowl; stir to blend.
- Rub chicken with oil and seasoning mixture. Place seasoned chicken in the slow cooker over sliced onions.
- Insert a meat probe into thickest part of the chicken; secure slow cooker lid.
- Press SLOW COOK; set probe temperature to 165°F and heat to LOW. Press START.
- Press STOP when the probe reaches 165°F. Remove chicken and place on a large cutting board.
- Garnish with thyme sprigs and lemon slices, if desired.
- Serve, and enjoy!
