Caprese Sandwich

Ingredients:

  • 1/2 cup balsamic vinegar
  • 8 slices slow cooker bread
  • 1 cup arugula
  • 2 ripe tomatoes, sliced
  • 500g fresh mozzarella, sliced
  • 12 fresh basil leaves
  • Extra-virgin olive oil, for drizzling
  • Kosher salt
  • Freshly ground black pepper
  • 2 tbsp store-bought or homemade basil pesto

Instructions:

  • In a small pot over medium heat, bring balsamic vinegar to a simmer. Cook, stirring occasionally, until reduced and is syrupy, about 5 minutes. Let cool.
  • Meanwhile, toast bread, if desired. Divide arugula among 4 slices of bread and top with tomatoes and mozzarella. Drizzle some balsamic glaze over mozzarella and layer basil leaves over it. Drizzle with oil and season with with salt and pepper. Spread a thick layer of pesto over one side of remaining bread slices.
  • Close sandwiches pesto side down and cut in half.
