Blueberry Cobbler

Ingredients:
- 4 Cups fresh of frozen blueberries (if using fresh wash them and don't dry)
- 1/4 Cup Granulated sugar
- 3 Tablespoons cornstarch
- 2 Tablespoons brown sugar packed
- 1 1/2 Cups All-purpose flour
- 1/3 Cup Granulated sugar
- 2 teaspoons Baking powder
- 1/4 teaspoon Salt
- 6 Tablespoons Unsalted Butter (at room temperature)
- 1/3 Cup Milk
Instructions:
- Stir the blueberries, sugar, cornstarch and brown sugar together in a large bowl then pour it out into a large Crock-Pot and spread it out.
- Stir the flour, sugar, baking powder and salt together in a separate large bowl then cut the butter into the mixture until a fine grain starts to form.
- Pour in the milk and stir to combine until it forms a stiff dough.
- Crumble it around the top of the blueberry mix evenly then cover the crockpot with the lid and cook on low for 3 ½ hours or on high for 2 hours or until the top turns a light golden colour and forms a nice crust.
- Serve with vanilla ice cream and fresh mint for garnish if desired.
