Blueberry Cobbler

Ingredients:

  • 4 Cups fresh of frozen blueberries (if using fresh wash them and don't dry)
  • 1/4 Cup Granulated sugar
  • 3 Tablespoons cornstarch
  • 2 Tablespoons brown sugar packed
  • 1 1/2 Cups All-purpose flour
  • 1/3 Cup Granulated sugar
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 6 Tablespoons Unsalted Butter (at room temperature)
  • 1/3 Cup Milk

Instructions:

  • Stir the blueberries, sugar, cornstarch and brown sugar together in a large bowl then pour it out into a large Crock-Pot and spread it out.
  • Stir the flour, sugar, baking powder and salt together in a separate large bowl then cut the butter into the mixture until a fine grain starts to form.
  • Pour in the milk and stir to combine until it forms a stiff dough.
  • Crumble it around the top of the blueberry mix evenly then cover the crockpot with the lid and cook on low for 3 ½ hours or on high for 2 hours or until the top turns a light golden colour and forms a nice crust.
  • Serve with vanilla ice cream and fresh mint for garnish if desired.
