Beef Stew with Bacon, Onion and Sweet Potatoes

Ingredients:

  • 4 slices bacon, diced
  • 1 large onion, chopped
  • 450 grams cubed beef stew meat (small pieces)
  • 1 teaspoon salt
  • 1 teaspoon dried thyme
  • ¼ teaspoon black pepper
  • 220ml beef broth
  • 2 medium sweet potatoes, cut into 5cm pieces
  • 2 tablespoons water
  • 2 tablespoons cornstarch

Instructions:

  • Press BROWN/SAUTÉ on Crockpot™ Express Pressure Cooker. Add bacon; cook and stir on HIGH 8 to 10 minutes or until crisp. Remove to paper towel-lined plate; set aside. Add onion to Cooking Pot; cook and stir 5 minutes or until tender. Add beef, salt, thyme, pepper and bacon; mix well.
  • Add broth. Secure lid. Press MEAT/POULTRY, set pressure to HIGH and time to 23 minutes. Make sure Steam Release Valve is in the "Seal" (closed) position. Press START/STOP.
  • Once cooking is complete, quick release pressure. Add sweet potatoes to Cooking Pot. Secure lid. Press MANUAL PRESSURE, set pressure to HIGH and time to 2 minutes. Make sure Steam Release Valve is in the "Seal" (closed) position. Press START/STOP.
  • Once cooking is complete, quick release pressure. Stir water into cornstarch in small bowl until smooth; whisk into cooking liquid. Press BROWN/SAUTÉ. Cook 1 to 2 minutes or until thickened. Ladle stew into bowls.
