Beef Stew with Bacon, Onion and Sweet Potatoes

Ingredients:
- 4 slices bacon, diced
- 1 large onion, chopped
- 450 grams cubed beef stew meat (small pieces)
- 1 teaspoon salt
- 1 teaspoon dried thyme
- ¼ teaspoon black pepper
- 220ml beef broth
- 2 medium sweet potatoes, cut into 5cm pieces
- 2 tablespoons water
- 2 tablespoons cornstarch
Instructions:
- Press BROWN/SAUTÉ on Crockpot™ Express Pressure Cooker. Add bacon; cook and stir on HIGH 8 to 10 minutes or until crisp. Remove to paper towel-lined plate; set aside. Add onion to Cooking Pot; cook and stir 5 minutes or until tender. Add beef, salt, thyme, pepper and bacon; mix well.
- Add broth. Secure lid. Press MEAT/POULTRY, set pressure to HIGH and time to 23 minutes. Make sure Steam Release Valve is in the "Seal" (closed) position. Press START/STOP.
- Once cooking is complete, quick release pressure. Add sweet potatoes to Cooking Pot. Secure lid. Press MANUAL PRESSURE, set pressure to HIGH and time to 2 minutes. Make sure Steam Release Valve is in the "Seal" (closed) position. Press START/STOP.
- Once cooking is complete, quick release pressure. Stir water into cornstarch in small bowl until smooth; whisk into cooking liquid. Press BROWN/SAUTÉ. Cook 1 to 2 minutes or until thickened. Ladle stew into bowls.
