Apricot and Brie Dip

Ingredients:
- ½ cup dried apricots, finely chopped
- ⅓ cup apricot preserves
- 1 tablespoon apricot preserves
- ¼ cup apple juice
- 2 x Brie cheese (approx 200 grams each) cut into cubes
- Crackers, bread, or vegetables for dipping
Instructions:
- Combine dried apricots, ⅓ cup apricot preserves, and apple juice in Crockpot® slow cooker.
- Cover and cook on HIGH 15 minutes.
- Stir in cheese. Return cover and continue cooking on HIGH for 25-30 minutes or until cheese is melted.
- Stir in remaining 1 tablespoon apricot preserves and turn slow cooker to LOW until ready to serve.
- Serve with your favorite crackers, bread, or vegetables.
