Sweet Potato Gratin

Ingredients:

  • 2 medium sweet potatoes, thinly sliced
  • 2 medium white potatoes, thinly sliced
  • 1 teaspoon salt
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon black pepper
  • ¼ cup vegetable broth
  • ½ cup whipping cream
  • 3 tablespoons all-purpose flour
  • ½ cup shredded Parmesan cheese
  • Sliced green onion (optional)

Instructions:

  • Layer potatoes alternately in single layer in bottom of Crockpot™ slow cooker. Season with salt, ginger, nutmeg and pepper; pour in broth.
  • Cover; cook on HIGH 3 hours or until potatoes are tender. Stir cream into flour in small bowl until blended.
  • Add 3 tablespoons cooking liquid to cream mixture; stir to blend.
  • Add cream mixture to slow cooker. Top with cheese. Cover; cook on HIGH 15 minutes.
  • Uncover; cook on HIGH 15 minutes or until thickened.
  • Garnish with green onion.
