Lemon Thyme Rotisserie Chicken

Ingredients:

  • 1 whole chicken
  • 2 medium onions, peeled and sliced half-inch thick
  • 1 tablespoon smoked paprika
  • 1 tablespoon dark brown sugar
  • 2 teaspoons sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon grated lemon peel
  • ½ teaspoon dried thyme
  • 1 tablespoon olive oil
  • Fresh thyme sprigs and lemon slices (optional)

Instructions:

  • Coat inside of your Crock-Pot® Slow Cooker with Sous Vide with nonstick cooking spray.
  • Place onions in the bottom of the slow cooker.
  • Combine paprika, brown sugar, salt, garlic powder, pepper, lemon peel and thyme in a small bowl; stir to blend.
  • Rub chicken with oil and seasoning mixture. Place seasoned chicken in the slow cooker over sliced onions.
  • Insert a meat probe into thickest part of the chicken; secure slow cooker lid.
  • Press SLOW COOK; set probe temperature to 165°F and heat to LOW. Press START.
  • Press STOP when the probe reaches 165°F. Remove chicken and place on a large cutting board.
  • Garnish with thyme sprigs and lemon slices, if desired.
  • Serve, and enjoy!
