Ingredients:

  • 2 large onions, cut into thin rings
  • 2 - 4 teaspoons BBQ seasoning to taste
  • 1 kg chicken breast fillets (without skin and bones)
  • 100 ml apple juice, white wine or chicken broth
  • 8 hamburger buns
  • For Serving: 300 - 400 ml BBQ sauce
  • For Serving: Coleslaw

Instructions:

  • Put the onion rings on the bottom of the slow cooker insert. Rub the chicken with the BBQ seasoning and place on top, pour in the liquid.
  • Put the lid on and cook for about 6 to 7 hours on LOW (3 to 3.5 on HIGH) until the meat is quite soft. Using two forks, pluck the pieces of meat into bite-sized pieces.
  • If desired, remove all or part of the cooking liquid if too much has formed. Add BBQ sauce and cook on HIGH for another 30 minutes until sauce is hot.
  • Toast bread rolls, top with meat and coleslaw - and eat out of hand.
