Vegetable Tian
You'll love this healthy dish. Vegetable Tian is a classic dish from Southern France, often served alongside grilled meat or fish. But it also makes a tasty lunch for vegetarians or no meat Monday!

Ingredients:
- 3 tomatoes
- 2 potatoes
- 1 zucchini
- 1 small aubergine
- 2 onions
- 2 cloves garlic
- 100g of goat cheese
- 4 tablespoons of olive oil
- 5 sprigs of parsley
- Salt and freshly ground pepper
Instructions:
- Peel the onions and garlic. Wash and cut all the vegetables into 2 mm thick slices.
- Pour a little oil in the bottom of the slow cooker and divide the vegetables (except the garlic) into the casserole, seasoning with salt and pepper.
- Spread the rest of the oil over the vegetables.
- Cut the goat cheese into shavings and place it on the vegetables.
- Chop the garlic and parsley and sprinkle over the vegetables.
- Close the slow cooker and start cooking.
